TURSU
Tursu or Toursi is very famous in Middle Eastern cuisines. It is a traditional and a “must” MEZE for raki and ouzo.
In Turkey the Tursu water is even drinkable in some places.
Tursu are mostly made in autumn months.
Recipes
There are a lot of recipes for Tursu, but the most famous are:
- Cauliflower tursu
- Mixed vegetables
- Chili peppers
- Red peppers or colourful peppers
Nowadays, a lot of chefs trying to give a modern touch to this traditional habit. So they are making a Lot of different types of Tursu, even fruits (like watermelon).
Tursu was the best way to preserve a lot of vegetables during the winter, till next season. Nowadays, this type of food is the best way to start your meal.
